How Long Do Hard-Boiled Eggs Last—And How to Tell If They’ve Gone Bad

Hard-boiled eggs are a convenient, protein-packed snack, but they don’t last forever. Unlike raw eggs, which can stay fresh for weeks, hard-boiled eggs have a much shorter shelf life. Storing them improperly can turn your quick snack into a stomachache waiting to happen. Here’s how to keep them fresh and safe to eat.

How to Store Hard-Boiled Eggs Properly

  • Keep the Shell On: If you want your hard-boiled eggs to last up to a whole week, leave the shell intact and store them in an airtight container in the fridge. The shell helps lock in moisture and blocks odors from the refrigerator.
  • Peeled Eggs? Eat Fast! If you’ve already peeled them, place them in an airtight container with a damp paper towel to keep them from drying out—but eat them within a day or two for the best taste and texture.
  • Never Leave Them Out: Hard-boiled eggs should never sit at room temperature for more than two hours—bacteria love warm eggs.

Can You Freeze Hard-Boiled Eggs?

Yes… But only the yolks! Freezing egg whites turns them rubbery and watery. Instead, separate the yolks, freeze them in an airtight container, and use them later for dressings, sauces, or salads.

Signs Your Hard-Boiled Eggs Have Gone Bad

  • Smell: A strong, sulfur-like odor = toss it.
  • Texture: Slimy whites or chalky yolks? Not safe.
  • Color: A harmless green-gray yolk is fine, but dark spots or an off-color sheen mean it’s time to say goodbye.

When in doubt, trust your nose—bad eggs don’t hide their stench!
