Potatoes may be a staple in your kitchen, but don’t let their versatility fool you. When they sprout, they can become dangerous. While a bag of potatoes can last for months if stored correctly, those eerie white sprouts and wrinkled skins are more than unappetizing -they’re a serious health risk.

You might be tempted to salvage sprouted potatoes, especially given rising grocery costs, but be warned: consuming them could lead to poisoning. Sprouted potatoes contain high levels of glycoalkaloids, toxic compounds that, in large amounts, can cause vomiting, diarrhea, severe abdominal pain, and even death in extreme cases. The longer the sprouts grow, the more toxic the potato becomes.

If your potato is firm and has only tiny sprouts, you can remove them and use the potato safely. However, if it’s soft, wrinkled, or the sprouts are long, do not take the risk – throw it out.

Store potatoes in a cool, dark, dry place, away from moisture and sunlight to avoid sprouting. Remember, saving a few dollars isn’t worth endangering your health. When in doubt, toss it out.
