New research highlights the incredible nutritional bounty of microgreens, showing they contain significantly higher levels of vitamins, minerals, and antioxidants than their mature vegetable counterparts. A study in Scientific Reports compared six varieties- broccoli, black radish, red beet, pea, sunflower, and bean- revealing their exceptional health benefits. Broccoli microgreens had the highest total phenolic content, a key antioxidant that reduces inflammation. Bean microgreens contained the most vitamin C, supporting immune function, while pea microgreens were rich in phosphorus and copper, essential for bone and cardiovascular health.
The study also found that sunflower microgreens excelled in calcium content, crucial for bone strength, and red beet microgreens had the highest flavonoid levels, known for their heart-protective effects. Additionally, black radish microgreens demonstrated the strongest antioxidant capacity, offering powerful cellular protection against disease.
